采购单 童子鸡1只
调料 小米椒、青杭椒各2个,小葱2根,姜4片,蒜2瓣,辣椒粉30克,花生30克,熟白芝麻15克,生抽2大勺,香醋、白糖各1小勺,玉米油适量,花椒油、芝麻油、白酒、葱花各少许
童子鸡洗净后冷水入锅,将2根小葱打结和2片姜一起放入锅中图1,倒少许白酒去腥。大火烧开后转中火,煮15分钟关火,再闷8分钟。煮鸡肉的时间可以根据整鸡的大小适当调整,一定要煮软,煮好后再闷一段时间,直到鸡肉最厚的地方也能用筷子轻易扎透图2,并且没有血水渗出。

准备一个大碗,倒入大半碗凉白开,将煮好的整鸡从锅中捞出,放入碗里浸泡图3,直至彻底放凉。如果有冰块也可同时放入碗中,用冰水泡过的鸡肉口感更佳。然后调制酱汁:小米椒、青杭椒切末,姜、蒜切细末,花生炒熟后用刀面压碎,放在佐料碗中备用图4。

另取一小碗,放熟白芝麻、辣椒粉备用,往锅中倒入适量玉米油,烧至六七成热后倒入小碗,搅打成辣椒油。注意油温不要过高,否则会让辣椒粉变糊从而导致辣椒油发苦。佐料碗中倒入生抽、白糖、香醋、芝麻油、花椒油和辣椒油,搅拌均匀图5。

将放凉的整鸡捞出沥水,切去头尾,再切块装盘,把调好的酱汁淋在鸡肉上,撒上葱花图6即可。

Tips
最好选用童子鸡,就是仔鸡,一斤多重的小公鸡或未下过蛋的小母鸡肉质最是紧实细嫩。没买到的话,也可以用三黄鸡代替。
